I remember it was not all that long ago that I published my posts religiously at 4am Mountain time; having finished them a day or two before. Now? I’m lucky to get my Friday Cocktail out by afternoon and this Chocolate Dessert Martini with Bailey’s Irish Cream is no exception. What the heck happened?

Well, let’s blame it not on being unorganized so much as just the opposite; I’m craving organization and organizing is time consuming. When I moved into this house 3 years ago I had definitely downsized a fair amount and tried to get rid of a lot of extraneous possessions.

For the most part that’s working even though I will do the occasional purge of kitchen items. Working with brands that send me products can see my cabinets start to burst at the seams again and I’m determined to nip that in the bud quicker now and try to remain efficient.

So I’ve given away that third pressure cooker and have shared food and liquor with neighbors. Despite putting out the word that no one close to me should EVER buy booze; I still had a burgeoning problem…and in the last several weeks I decided to finally do something about it. This is the result!

What used to be stacks of cookbooks in the basement now find themselves organized on shelves. While I do have a liquor cabinet (well, a china hutch that holds glasses and booze!), it was nowhere near large enough to hold the enormous amount of liquor I receive from brands wanting me to feature their products.

I give it away and have others over for cocktails but some weeks I get five bottles and I just cannot keep up. They were simply lined up against one wall of my basement and it was a total pain finding anything.

No more! These two shelving units are in my office and hold the basics; all of my bourbon, rum, tequila, vodka and gin; along with a good size amount of my cookbooks. I have a third unit on the landing to the basement that is filled with almost every liqueur imaginable and more cookbooks. Having it all sorted and categorized in Excel? Priceless!

It’s been a long time coming and actually took weeks to accomplish; mostly because the shelves had to be put together and I started over the holidays. But I’m finally done and this week I’ve been immersed in finishing some final touches in my office.

What a great feeling…but definitely this effort stole precious time from blogging so I’ve often been late for this very important date…i.e., Friday Cocktails. I’m not promising I’ll get a cocktail out every Friday at 4am again but having my ducks in a row will certainly help me  achieve that goal.

This cocktail is easy to pull together but still simple and beautiful. When I call it a dessert cocktail; I mean it seriously. This isn’t an ounce of chocolate liqueur mixed with some vodka; this is more of a chocolate ganache mixed with Baileys and vodka. It’s rich and decadent and serves a variety of purposes.

I did macerate the raspberries in a bit of raspberry liqueur but you don’t have to. I made some of my own liqueur recently and, well, you know…had to use it right?

Anyway…need a cocktail? Got you covered. Want to make a special Valentine dessert for your sweetie? That too. Both in one glass? Yep, the BEST part!

Not just a chocolate martini; this is a dessert cocktail with a rich chocolate ganache combined with Bailey's Irish Cream and vodka.

Ingredients
  

To Make the Chocolate Cream:

  • 1 cup Half and half
  • 5 oz Semi-sweet chocolate

To Make the Martinis:

  • 1 cup Chocolate Cream
  • 1 oz good quality vodka
  • 4 oz Baileys Irish cream

For the Garnish:

  • Bailey's Irish Cream
  • Cocoa
  • Fresh Raspberries I soaked mine in a little bit of raspberry liqueur but you don't have to!

Instructions
 

  • To make the Chocolate Cream
  • Heat the half and half over medium heat until it just starts to boil.
  • Lower the heat to medium low and add the chocolate. Stir until the chocolate melts. Cool in the refrigerator.
  • Remove from the refrigerator when cold and add the vodka and Bailey's Irish Cream. Stir to combine well.
  • To make the Chocolate Cocktails
  • To decorate the glasses, moisten the rim of your glasses with Baileys Irish Cream. Put cocoa on a plate and dip the rims in the cocoa. Chill the glasses.
  • Fill a cocktail shaker halfway with ice.
  • Pour half of the chocolate cream mixture into the shaker. Shake vigorously for 30 seconds. Pour into one glass. Repeat with the second glass.
  • Garnish each glass with raspberries on a skewer.
  • Serve immediately.

  1. Oh heavens I need to do some organizing! While I don’t get the bottles of liquor that you do, the urge to collect dishes and pretty napkins has created some “issues” in my house! Let alone, cookbooks and ingredients “just in case.” Love this.

    1. It’s an addiction isn’t it? I’m starting to use Goodwill more often…I can return dishes I’ve used enough to them as a donation and while there maybe pick up a new plate or two. They are iffy at best but I always seem to find something I like!

  2. Your trimmed down booze collection is still mind boggling to me! I think that the only places I have seen such a selection are nicer liquor stores or super well stocked bars:) Way to go organizing everything!

  3. I envy you your tequila collection! A spirit I need to learn more about — I know the basics, barely, but that’s it. And haven’t developed a particularly knowledgeable palate for it. Anyway, lovely creation. Perfect for Valentine’s Day! For those of use who want to drink their desserts, that is. Count me in. 🙂

    1. For years the only thing I knew about tequila John was that I didn’t like it. Then I was introduced to a good tequila and the world changed. The awful harshness I associated with it was due to one thing…just a cheap, non-aged brand!

      I have a really great recipe on the site John for the best margarita I’ve ever had and during the4 process of putting it together I was schooled in the difference in aging and tried a reposado for the first time and a light bulb went off. Try this one…maybe the same thing will happen with you? Now while I love margaritas still; I am learning how to use tequila in so many different ways and have had some truly amazing cocktails.
