3cupsall-purpose flour
2cupssugar
2teaspoonsground cinnamon
1teaspoonbaking soda
½teaspoonbaking powder
½teaspoonsalt
4eggs
1cupcanola oil
½teaspoonvanilla extract
2cupscoarsely chopped apples
1cupcoarsely chopped walnutstoasted
Instructions
Preheat oven to 350° In a large bowl, whisk the first six ingredients. In another bowl, whisk eggs, oil and vanilla until blended. Add to flour mixture; stir just until moistened (batter will be thick). Fold in apples and walnuts.
Put mixture into two greased 8x4-in. loaf pans. Bake for 50-55 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks to cool completely.
