Ingredients

For the Tuna Patties:

  • 3 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 large egg white
  • ¼ cup flax meal I found this at Sprouts in the bins
  • ¼ cup bread crumbs
  • 2 – 6.5 oz. cans of tuna in water drained and flaked
  • ¼ cup chopped green onions
  • 1 tsp tarragon

To Make the Patties:

  • ¼ cup bread crumbs
  • Non stick cooking spray

Instructions

  • Combine the first three ingredients in a medium bowl and add remaining ingredients;stir well.
  • Divide mixture into four equal portions, shaping into patties.
  • Press remaining 1/4 cup of bread crumbs onto both sides of patties. Brown patties on both sides in a non-stick skillet coated with non-stick spray.
  • Serve as a plain patty or as a sandwich with lettuce, tomato and a whole wheat bun.
