For the Tuna Patties:
- 3 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- 1 large egg white
- ¼ cup flax meal I found this at Sprouts in the bins
- ¼ cup bread crumbs
- 2 – 6.5 oz. cans of tuna in water drained and flaked
- ¼ cup chopped green onions
- 1 tsp tarragon
To Make the Patties:
- ¼ cup bread crumbs
- Non stick cooking spray
Combine the first three ingredients in a medium bowl and add remaining ingredients;stir well.
Divide mixture into four equal portions, shaping into patties.
Press remaining 1/4 cup of bread crumbs onto both sides of patties. Brown patties on both sides in a non-stick skillet coated with non-stick spray.
Serve as a plain patty or as a sandwich with lettuce, tomato and a whole wheat bun.
