One of my favorite summer combinations; this is such a cold, refreshing treat. Sparkling Strawberry Sorbet Cocktail combines strawberry sherbet with chilled sparkling wine and it's so perfect!

Ingredients
For the Strawberry Sorbet:
3cupsstrawberrieshulls removed
4-6ozsimple syrup to taste
2TbspLemon Juice
2TbspLimoncellooptional
To Make the Cocktail:
1 750mlbottle Moscato or Prosecco or even Pinot Grigiochilled
Instructions
Purée strawberries, simple syrup, Limoncello and lemon juice in a blender until smooth. Chill for 30 minutes. Process in an ice cream maker according to manufacturer’s instructions and then chill for at least a half hour in the freezer.
Spoon 2 scoops into champagne or rocks glasses and top with chilled Prosecco. Garnish with a strawberry and serve immediately with straws. Freeze any remaining sorbet.
Notes
Want a Mocktail? So easy, just use some Sparkling water instead. I would go for a flavored one with lemon, lime or strawberry!
