Roasted Green Beans with Pancetta, Red Onion and Garlic

The best green bean dish I've ever had, just perfect with pancetta, red onion, and garlic

Ingredients

  • 1 ½ pounds green beans trimmed
  • 2 Tbsp olive oil
  • 2 oz pancetta diced
  • ½ red onion thinly sliced
  • 4 garlic cloves thinly sliced
  • Zest of one lemon

Instructions

  • Preheat oven to 400F
  • Toss beans, garlic, pancetta and onion with olive oil on large rimmed baking sheet. Season with salt and pepper.
  • Roast until browned and almost tender, stirring occasionally; 10-15 minutes.
  • Add lemon zest, mix and serve.
