Ingredients
For the Sugared Almonds
⅓cupsliced almonds
3tablespoonssugar
For the Dressing:
¼cupsafflower oil
1tablespoonchopped parsley
2tablespoonssugar
1tablespooncider vinegar
1dashTabasco sauceor more...truthfully I like several!
½teaspoonsalt
dash of pepper
For the Salad
1bunchbaby spinachor regular spinach, torn
1cupcelerychopped
2green onionschopped
12ouncesmandarin orange slices
Instructions
Prepare the Almonds
In a small pan over medium heat, add almonds and sugar and stir constantly until almonds are coated and sugar is melted. Watch carefully as they will burn easily.
Remove almonds from pan to a piece of foil and separate nuts; allow to cool completely.
To Make the Dressing
Mix all dressing ingredients and chill.
To Make the Salad
Mix spinach, celery, and green onions. Just before serving, add almonds and oranges. Toss with dressing.
