A beautiful salad year round with mandarin oranges, candied almonds and a tangy dressing.

Ingredients

For the Sugared Almonds

  • cup sliced almonds
  • 3 tablespoons sugar

For the Dressing:

  • ¼ cup safflower oil
  • 1 tablespoon chopped parsley
  • 2 tablespoons sugar
  • 1 tablespoon cider vinegar
  • 1 dash Tabasco sauce or more...truthfully I like several!
  • ½ teaspoon salt
  • dash of pepper

For the Salad

  • 1 bunch baby spinach or regular spinach, torn
  • 1 cup celery chopped
  • 2 green onions chopped
  • 12 ounces mandarin orange slices

Instructions

Prepare the Almonds

  • In a small pan over medium heat, add almonds and sugar and stir constantly until almonds are coated and sugar is melted. Watch carefully as they will burn easily.
  • Remove almonds from pan to a piece of foil and separate nuts; allow to cool completely.

To Make the Dressing

  • Mix all dressing ingredients and chill.

To Make the Salad

  • Mix spinach, celery, and green onions. Just before serving, add almonds and oranges. Toss with dressing.
