A surprising and delicious float with vanilla ice cream, Guinness beer and Irish Cream Liqueur

For the Bailey's Irish Cream Ice Cream
- 24 ounces vanilla bean ice cream softened
- 3 tablespoons Bailey's Irish Cream
For the Irish Whiskey Chocolate Sauce
- 2 ounces dark chocolate
- 6 ounces milk chocolate
- ¼ cup half and half
- 2 tablespoons Irish Whiskey
For the Float
- 4-6 ounces Guinness Stout chilled
To Make Irish Cream Ice Cream
To Make the Chocolate Sauce
Combine chocolate and half and half in a small saucepan over low heat. Warm and stir until the chocolate has melted.
Stir in the Irish Whiskey and cook on low for 1 minute.Turn off heat but keep covered to keep warm.
To Make the Float
Drizzle some chocolate sauce onto the inside of the glass.
Put 2 scoops of the ice cream into a chilled glass or mug.
Top with the chilled beer and drizzle top with additional chocolate sauce.
Add additional half and half if chocolate sauce needs to be thinner.
