Corned Beef Hash with Bacon

An easy and delicious dish using leftovers, including corned beef and potatoes, that are seasoned and warmed and topped with a fried egg.

Ingredients

  • 4 strips bacon chopped into 1" pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • ½ pound corned beef cooked, chopped into 1/2" cubes
  • 4 red potatoes cooked, chopped into 1/2" cubes
  • 2 teaspoons Worcestershire Sauce
  • Salt and Pepper to taste

Garnish (optional)

  • Parsley chopped

Instructions

  • Cook bacon in large skillet, once it has rendered most of the fat, cook until just done but not crisp. Remove all but 1 tablespoon of bacon fat.
  • Add onion to the skillet and cook, stirring often, until onions become translucent, about 3-4 minutes. Add the garlic and sauté for one additional minute.
  • Add butter to pan and let it melt, then stir in corned beef, potatoes, and Worcestershire sauce. Flatten in pan and let cook for approximately 3-4 minutes until it starts to form a crust on the bottom. Flip and do the same on the other side., until slightly browned, about 3 minutes.
  • Season with salt and pepper, to taste.
  • Serve immediately, garnished with parsley, if desired.

Optional

  • Fry an egg for each serving to top the corned beef hash.
