An easy and delicious dish using leftovers, including corned beef and potatoes, that are seasoned and warmed and topped with a fried egg.

Ingredients
4stripsbaconchopped into 1" pieces
1mediumonionchopped
2clovesgarlicminced
2tablespoonsbutter
½poundcorned beefcooked, chopped into 1/2" cubes
4red potatoescooked, chopped into 1/2" cubes
2teaspoonsWorcestershire Sauce
Salt and Pepper to taste

Instructions
Cook bacon in large skillet, once it has rendered most of the fat, cook until just done but not crisp. Remove all but 1 tablespoon of bacon fat.
Add onion to the skillet and cook, stirring often, until onions become translucent, about 3-4 minutes. Add the garlic and sauté for one additional minute.
Add butter to pan and let it melt, then stir in corned beef, potatoes, and Worcestershire sauce. Flatten in pan and let cook for approximately 3-4 minutes until it starts to form a crust on the bottom. Flip and do the same on the other side., until slightly browned, about 3 minutes.
Season with salt and pepper, to taste.
Serve immediately, garnished with parsley, if desired.
Optional
Fry an egg for each serving to top the corned beef hash.
