Ingredients
⅓Csliced almonds
3tbspsugar
1bunch of spinach
1Cchopped celery
2whole green onionschopped
12ozmandarin orange slicesor 1-11 oz can mandarin oranges, drained
For the Dressing:
½tspsalt
dash of pepper
¼Csafflower oil
1Tbspchopped parsley
2Tbspsugar
1Tbspcider vinegar
Dash of Tabasco sauceor more...truthfully I like several!
Instructions
In a small pan over medium heat, cook almonds and sugar stirring constantly until almonds are coated and sugar is melted. Watch carefully as they will burn easily. Cool and store in an air-tight container.
Mix all dressing ingredients and chill.
Mix spinach, celery, and green onions. Just before serving, add almonds and oranges. Toss with dressing.
