Sparkling Raspberry, Vodka, and Honey Cocktail

A refreshing blend of vodka, raspberries, and lemon sweetened with a touch of honey and topped off with Prosecco. So delicious and beautiful to boot!

Ingredients

  • 12-14 raspberries
  • 4 oz NEFT Vodka
  • 2 oz lemon juice freshly squeezed
  • 2 ounces honey syrup see notes
  • Prosecco chilled

Instructions

  • Put raspberries into a bowl and using a spoon or muddler, muddle them until they are completely broken down. Strain into cocktail shaker, removing all the seeds and solids.
  • Fill the cocktail shaker halfway with ice and add the remaining ingredients except the lemon garnish. Shake until the contain is ice cold; about 15-20 shakes.
  • Fill two Collins glasses with ice and pour the mixture into the glasses. Top with chilled Prosecco and garnish with a lemon slice.

Notes

Honey Syrup

  1. Equal parts honey and water, warm over medium heat or in a microwave just until it blends together, cool before using.
  2. I usually make enough to store some in the fridge; at the minimum 1/4 cup of each.
Want a non alcoholic version? Omit the Prosecco and vodka and finish with sparkling water.
