Southern Pecan Bread

An old Southern recipe that is really closer to a bar cookie than a bread...but who cares, they are fantastic!

Ingredients

  • 1 cup sugar
  • 1 cup brown sugar
  • 4 eggs beaten
  • ½ cup melted butter
  • ½ cup vegetable oil
  • 1 tsp vanilla
  • 1 ½ cups all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2 cups chopped pecans - divided

Instructions

  • Preheat oven to 350 degrees. Spray and flour a 9x13 baking dish; line the bottom with parchment paper and lightly grease.
  • In a medium mixing bowl, combine sugar, brown sugar, eggs, butter, and oil until smooth. Gently stir in flour and vanilla. Finally, mix in 1 & 1/2 cups chopped pecans.
  • Pour mixture into prepared baking dish.
  • Sprinkle the remaining (1/2 cup) chopped pecans on top
  • Bake for 30-35 minutes until lightly browned
  • Cool in pan and cut into squares to serve
