Roasted Green Beans with Pancetta, Red Onion and Garlic
The best green bean dish I've ever had, just perfect with pancetta, red onion, and garlic
Servings 4 -6 Servings
- 1 ½ pounds green beans trimmed
- 2 Tbsp olive oil
- 2 oz pancetta diced
- ½ red onion thinly sliced
- 4 garlic cloves thinly sliced
- Zest of one lemon
Preheat oven to 400F
Toss beans, garlic, pancetta and onion with olive oil on large rimmed baking sheet. Season with salt and pepper.
Roast until browned and almost tender, stirring occasionally; 10-15 minutes.
Add lemon zest, mix and serve.
