Cinco de Mayo Recipe Roundup

Tomorrow (May 5th) is  Cinco de Mayo, a Mexican holiday that commemorates the victory of the Mexican Army over the French Army in the 1862 battle of Puebla. Though becoming a more well known tradition across the country, it is of significant importance in Colorado and other Rocky Mountain states due to the large number of Mexican immigrants in this region. I will admit, I don’t participate in the more raucous celebrations held around our town but I’ve joined friends and family on many occasions to honor this tradition with some of our best Mexican style food and drinks.

If you’re in the mood; maybe these can be your inspiration! And if you’re not celebrating Cinco de Mayo…then don’t despair, these are all wonderful dishes to accompany your summer barbecue.

  1. I slaved at work yesterday and didn’t even have a margarita! But we love Mexican food around here, and I will browse your recap:)
    That sombrero reminded me of the trip to Yucatan last spring. My dad asked my daughter to buy him a mariachi sombrero and she toted the stupid thing first to LA, and then to Serbia. I have no clue what he does with it, but it’s red and gold, stiff, and HUGE!

  4. OMG, I have to find time to go through all these recipes you linked here. I was at Costco the other day and saw a machine to make Margaritas. I’ve never had that drink but your picture makes me think I should try it and perhaps I should have bought the machine LOL

  5. Somehow Cinco de Mayo has gotten lost in the melee of my week so thank you for the reminder with so many delicious selections! I LOVE the photos at top (the sombrero especially) and the pink margarita was calling to me. Something about pink drinks….All these reminded me about some Roast Tomatillo Salsa I made in the fall and froze that I need to pull out AND with your final invite I’ll include the link. It’s delish, easy to make with a nice smoky flavor. I’ll save this post for sure Barb loving these flavors more than anything!
